ABOUT KAMPOT SEA SALT

Through out time salt has been used as currency, medicine and a preservative and enhancer of food. It symbolizes purity in many religions. Buddhist tradition holds that salt repels evil spirits. Most importantly salt is an essential element for life: the human body requires salt to survive. Cambodian sea salt comes from the coastal region of Kampot. Using shallow coastal fields, sea water from the Gulf of Thailand is allowed to flood them during high tide. The sea water is channeled from field to field for several days allowing the sun and wind to evaporate the water leaving salt to be hand racked into small white mountains. Large, fully developed sea salt crystals are preferred for cooking and roasting, they are also milled or ground for exceptional finish and table salt. Most consumers are familiar only with the refined or boiled white, oven dried, vacuum evaporated salt. Processed salt is mined from salt flats. All the minerals and ocean trace elements have been leached away long, long ago. Processed salt contains iodine or other additives, like anti-caking chemicals. Grocery store sea salt is the by-product of desalination factories. This type of salt can be contaminated due to the water sources. Our Kampot sea salt has a wonderfully pure ocean saltiness that is perfect for the kitchen and table.
